Local Food Culture

Discover the Ingredients Behind Zanzibar’s Cuisine

Zanzibar’s cuisine developed through centuries of contact between East Africa,
Arabia, India and other regions connected by Indian Ocean trade. This history
can be seen in the island’s use of rice, coconut, seafood, vegetables and
aromatic spices.

During the market visit, your guide will introduce ingredients frequently
found in local kitchens. These may include cloves, cinnamon, cardamom,
turmeric, black pepper, coconut, cassava, plantain, rice, beans, fresh herbs,
vegetables and seasonal fruit.

The exact products available vary according to season, market supply and the
menu selected for the class. The experience therefore differs slightly from
one day to another.

Market experience:
Local food markets are working commercial spaces rather than staged tourist
attractions. They may be crowded, noisy, warm and wet in some sections.
Follow your guide closely and ask permission before photographing vendors.
Hands-On Class

Learn Traditional Cooking Techniques

At the cooking venue, the local cook will introduce the ingredients and explain
the dishes planned for your class. Participants may help wash, peel, slice,
grind, mix and cook ingredients according to their comfort and experience.

The menu may feature dishes inspired by traditional Swahili and Zanzibari
cooking, such as spiced rice, curry, vegetables, chapati, samosas or other
locally prepared foods. The exact dishes are selected according to ingredient
availability, dietary requirements and the cook’s planned menu.

No previous cooking experience is required. The cook will demonstrate the
techniques and help participants complete each stage safely.

Menu notice:
Individual dishes are not guaranteed unless they are confirmed before the
class. The menu can change according to fresh ingredient availability,
season, dietary requirements and the number of participants.

We really loved this cooking class. First we went to local market and the guide showed us many spices, vegetables and fruits we never see before. After we cooked few Zanzibar dishes together with local chef. Food was very tasty and atmosphere was friendly. One of our favorite experience on the island
